Food Pairing: The balance of Chardonnay and Pinot Blanc produces a superb wine which can be enjoyed with a dish of scallops, with asparagus, a meat pie, jambon persillé, a Roquefort feuilleté or with foie gras. Drink from 3 to 5 years of age, chilled rather than cold.

Vinification: The harvest is 40% manual and 60% mechanical and is followed by a traditional white wine vinification. The grapes are broken and pressed and the must is clarified. Native yeasts (using the pied de cuve method) are added to provided the best conditions for fermentation. 30% of the wine is aged in new barrels, the rest in vats. After 8 to 10 months the wine is blended.
Interesting notes: This wine remains an exception. There are very few white wine producers. ln addition, the 30% Pinot Blanc content provides another source of originality, this variety being very little grown in Burgundy, even though authorised.
Situé au coeur du vignoble de bourgogne, à la frontière des célébres "Côte de Nuits" et "Côte de Beaune", le Domaine fut créé en 1899 par Amable Désertaux. La superficie est alors d'environ 3 ha. Il faudra attendre l'arrivée de Bernard et Janine Désertaux pour le voir s'agrandir à 12 ha.
L'installation de leurs enfants, Christine en 1995 et Vincent en janvier 2000, permet de dynamiser et de faire évoluer le Domaine, tout en ayant à coeur de conserver l'esprit de la maison qui a si bien contribué à la réputation des vins que vous appréciez. Vous trouverez des vins élaborés dans le plus grand respect des traditions bourguignonnes.
