Biodynamic methods since 2016
WEATHER CONDITIONS
A rainy and hail-prone spring initially caused great concern. Then, exceptionally dry and sunny summer conditions providentially set in from mid-July and lasted until the end of October. The ripening process was complete for each grape variety thanks to the good conditions in August and September, which were sufficiently dry but without excessive heat.
HARVEST
Hand picking with sorting pre and post destemming – no crushing.
VINIFICATION
In stainless steel vats – temperature 28-30°C – Maceration 2 to 4 weeks.
AGEING
18 months in barrels (30% in new oak ) and 15% in amphoras.
