Description

Picandou Affiné or "Aged Picandou" is a small, pasteurized goat cheese produced in France (Périgord region). It is characterized by a natural white rind, a creamy texture, and a more intense and spicy flavor than the fresh version. Often sold in pairs, it offers nutty notes and can be enjoyed hot (toasted) or cold, making it ideal in salads.

Picandou is a brand of small, very creamy goat cheeses, emblematic of Périgord, which belong to the cabécou family (small goat cheeses from the Southwest of France).

When it is "aged" or "affiné", Picandou becomes drier and develops a more pronounced taste, characteristic of the evolution of cabécous.

It is produced by Fromagerie Picandine, which is part of the Fromi group, specializing in goat cheeses.

Characteristics of Aged Picandou:

  • Production: Handcrafted, using goat's milk.
  • Flavor profile: Intense, spicy with a hint of hazelnut.
  • Aging: Approximately 5 to 8 days, which distinguishes it from "Fresh Picandou".
  • Uses: Versatile, it can be enjoyed cold, hot, on toast, in pasta, or in salads.
