A Swiss-style cheese with a creamy, firm texture, pungent aroma and milky to nutty flavor notes. An ideal cheese for cooking since Raclette does not separate even when melted. Raclette shares a name with the Swiss dish where cheese is melted over a special machine and scraped over various accompaniments like meat, vegetables and bread, but can also be enjoyed in cold slices.
