Rovagnati's Mortadella is made with 100% Italian meat from the selection of the best pork cuts: the shoulder for the leaner parts, and the throat for the fat ones. It's then cooked in a traditional brick oven for 36 hours so that the high cooking temperature does not compromise the natural characteristics of the meat: a process that doesn't add moisture, resulting in a mild flavor and a delicate silky texture.
