Description
This traditional Agriform DOP Parmigiano Reggiano is interwoven into Italy's gastronomy, featuring flavor notes of nutty, salty, caramelly, and slightly sweet, spicy, and floral. Straw yellow rinds encase an ivory colored, sometimes hay colored, paste that's dry, crackly, crunchy, and has semi-fat suppleness. Milked from the native, pasture-grazing cows, this cheese is aged for an entire year to create the distinct nuances of traditional Parmigiano Reggiano to complete any upscale menu.
Tucked away in the picturesque mountains of the Belluno Province, Agriform is a cheese-making cooperative that has been in operation for more than 60 years. Though the terrain of the surrounding region is rocky and treacherous and the climate is renowned for being harsh - with cold, snowy winters and short, cool summers - its rich, uncontaminated pastures have been used to graze dairy cattle for generations.

cheese is made exclusively in a small region of Italy that includes the provinces of Parma,
Reggio Emilia, Modena, Bologna to the left of the river Reno and Mantua to the right of the river Po. Today it is made the same way it was made almost 1,000 years ago – using three simple ingredients, no preservatives and no additives, with great respect for artisanal traditions. Parmigiano Reggiano is aged a minimum of 12 months – which contributes to its rich flavor
and texture – and when it reaches 24 months is at its best.
