Description
The Beaufort AOP Chalet d’Alpage by Fromagerie Seignemartin is a rare cheese. It is made in the Courchevel mountains, high in the "Alpages", over 1.500 m high, and one of the last 15 mountain pastures to make Beaufort according to traditional methods: seasonal production over 100 days from June to September and transhumance of the cows between 1500 and 2600 meters above sea level. The cheese matures for at least 5 months and develops fruity and salty sunny aromas.
