Our White Tuna – Bonito del Norte – is individually line-caught during the summer fishing season, either with live bait or baitcasting. This age-old technique of selective fishing respects the environment and the seabed. We process our White Tuna in a totally traditional way in search of an exceptional result in terms of delicate texture and exquisite flavor on the palate.

Company origin: Conservas Ortiz was founded in 1891 in Ondarroa, a historic fishing port in Vizcaya (Biscay), Basque Country. This remains the company’s headquarters and a central part of their operations.
Fish source: Ortiz White Tuna in Olive Oil (known as Bonito del Norte) comes from the Cantabrian Sea (the southern part of the Bay of Biscay), off the northern coast of Spain.
It’s premium albacore tuna (Thunnus alalunga), often called “white tuna” or “Bonito del Norte” in Spain. This variety is prized for its mild flavor, tender texture, and light color compared to other tunas.
