Description

Camembert Le Châtelain retains most of the authentic flavors and qualities of the raw-milk cheese you can only buy in France and is gently pasteurized to make it available in the United States.

To retain maximum moisture, the curds are gently hand-ladled into molds and allowed to drain naturally. Once firm after a few hours, they are unmolded and moved to a drying room. Here, the Camemberts are turned every 48 hours to ensure even moisture distribution and slight surface drying, which promotes the growth of the white, bloomy Penicillium Candidum rind. Finally, they are transferred to a maturation room for aging.

Ingredients: Pasteurized cow milk, cheese cultures, salt, enzymes

Serving suggestions: Accompany with cider, Calvados, or a light red wine.
