Comtesse di Bufala de la Madeleine is stuffed with summer truffles (Tuber aestivum vitt. 2,2%). A cheese creation from our master cheesemaker. Soft cheese with a bloomy rind and hand-made in Italy’s Bergamo region, using the very finest buffalo milk.


It has the typical shape and appearance of the cheeses made in the region. It combines the mild flavor, creamy texture and freshness of buffalo-milk cheese with succulent pieces of premium Italian summer truffles from Acqualagna, a city located in the Marche region, in the heart of the Furlo Pass nature preserve, known for its delectable treasure: truffles.


The Comtesse di Bufala de la Madeleine has a square shape, a handsome white bloomy rind, a dense and creamy paste, fresh aromas and distinctive flavors. A tasty cheese that everyone will enjoy.

The combination of a buffalo milk cheese, smooth and creamy, and a fine layer of a subtle mixture of Italian summer truffles and cream. The smooth texture of buffalo cheese perfectly accentuates the delicious flavour of our Acqualagna truffle. For this recipe, which is the result of months of study, we have decided to set the quantity of truffle at 3.5%. These truffles originate from Acqualagna in the Marche region.


L’alliance entre un fromage au lait de bufflonne, doux et crémeux, et d’une fine couche du mélange subtil de truffe d’été d’Italie et de crème. La douceur du fromage de bufflonne fait ressortir à merveille le délicieux goût de notre truffe d’Acqualagna. Pour cette recette étudiée pendant plusieurs mois, nous avons décidé de pousser à 3,5% la quantité de truffe. La truffe utilisée est récoltée de juin à novembre, au cœur de la réserve naturelle de la Gorge de Furlo, dans les forêts apenniniques.
