Echire is a famed artisan French butter, from the milk of cows of the small village of Poitiers and La Rochelle. Known as one of the best butters in France, Échiré butter is served in the finest dining establishments (which is why the French covet this butter and keep 85% of the production within France).
This sophisticated butter won AOC-protected status, and is produced mainly by hand. This bar of Beurre Échiré has a light texture and subtle flavor making this butter just about divine.
This butter is enhanced with a slight touch of salt that reinforces its subtlety and homogeneity.
One of the special features of our Echiré PDO Charentes-Poitou butter is its supple, malleable texture, which allows the butter can be worked without tearing. An asset that makes our butter a unique raw material for bakers and pâtissiers.
Our Échiré butter factory has been perpetuating a unique know-how since 1894: that of mastering the art of butter through a slow maturation of the creams for 18 hours and churning in wooden barrels.
A local butter which is still produced in the same emblematic butter factory located in Échiré, a few kilometers from Niort. (79).
This traditional technique, unchanged for 130 years, guarantees a butter of exceptional quality, appreciated by professionals, particularly for professional puff pastry butter. The milk is carefully selected from our farmers labeled Beurre Charentes-Poitou AOP, respecting precise specifications.
The cream is matured for around 18 hours, then churned for around 2.5 hours to offer a butter with a unique texture and flavor.
