Black Burgundy Season: from September to December

The Burgundy truffle, also known as the autumn truffle, is harvested in France, as well as in Spain, Italy and some Eastern European countries such as Bulgaria.

It differs from its cousin, the summer truffle, thanks to its slightly more intense aroma and more distinctive character. On the palate, its initial bitterness fades away, revealing subtle notes of hazelnut and mushroom.

Our truffles are washed, carefully sorted and selected before being packed in specially designed bags to ensure optimal preservation. Upon receipt, rinse the truffles and pat them dry.

Best consumed within 7 days. Truffles can also be frozen.

Burgundy truffles are lighter in taste and aroma than Black or White Winter truffles, which makes them an "affordable luxury" — for a more “classic” truffle flavor, we suggest to wait until White Truffles (coming soon) or Black Winter Truffles (coming in December). 

How to use Black Burgundy Truffles?

Most chefs & restaurants complement Burgundy truffles with truffle oil in dishes like truffle pasta, risotto or pizza. Burgundy truffles can really shine on their own in dishes like crudos, tartares, or paired with other seasonal mushrooms, but they are commonly used along with truffle oil. 

Suggested quantity: per person use 1 oz for entree or 0.5 oz for appetizer.

How to store Black Burgundy Truffles? Fresh Truffles should be consumed as soon as possible. They last just a few days.

For best storing: wrap each truffle singularly in paper towel, place them inside a glass jar, and store in your fridge. Replace the paper towel daily. 

Remember: Truffles do not like humidity!
