Known as the Périgord truffle, the black winter truffle has dark, robustly veined flesh and the strongest flavor and aroma of all black truffles.


Our summer-season truffles are foraged in Chile, where the Southern Hemisphere's conditions mirror those of European winter. These high-quality truffles are sold as whole pieces


Note: Truffles are foraged, not farmed. As such, their flavor, aroma, and appearance can vary naturally. We hand-inspect each truffle for quality and aroma, but we cannot sample them individually.


The French Périgord Black Truffles (Tuber melanosporum vitt) is also known as the black diamond of the table, growing as deep as 2 feet under the ground, near oak trees and hazelnuts, and have a strong depth of flavor, allowing them to be cooked briefly or low and slow. They can be shaved fresh as a finishing element or infused into sauces to add depth.


The classic recipe for black truffles is the salsa alla spoletina: for which the truffles are minced and added to warm (but not frying!) olive oil, a touch of garlic, salt and pepper. This makes it ideal for bruschettas, spaghetti, meat and fish. You can grate black winter truffles on vanilla ice cream for the best dessert ever!


Quantities of product recommended per portion: 1 oz.


Product life: 1 to 2 weeks, kept into a refrigerator at 37.5 F (3 C ), wrapped in paper towel.


We recommend to use the truffles soon after they are received, preferably within 2 days.

Black Truffles are here and we want to remind all fellow #TruffleLovers how to properly treat your fresh truffle:

1️⃣ Remove it from the original paper towel. Use a clean and dry paper towel to wrap the truffle — it needs to be changed daily.

2️⃣ Once the fresh truffle is wrapped in an absorbent paper towel, place it in a dry, sealed container like Tupperware or a glass jar.

3️⃣ Truffles should be stored in a sealed glass jar in a low-moisture region of your refrigerator. If stored properly, black truffles will last approximately 5-6 days after receipt. They also freeze well.

Truffles may develop a little mold; it's completely natural, and you just need to brush it off with a soft brush before use.

4️⃣ Black truffles work wonderfully heated or served as a garnish. They can also be finely grated using a microplane. Bon appétit!
