PREPARATION: In a non-stick pan, bring 750ml of water and 2 or more tablespoons of extra virgin olive oil to a boil. Pour in the contents of the packet, cover, and cook over medium-low heat for 16 minutes, stirring occasionally. Add more water if needed. Remove the lid and continue cooking for 2 minutes or more until the water is almost completely absorbed. Adjust seasoning, add a knob of salted butter and Parmesan cheese. Let it rest for 1 minute before serving.

TIPS: Add 1/4 cup of white wine to the cooking water. Cook as you would a classic risotto, adding water gradually.

WINE PAIRING: Chardonnay or other white wine.
