PREPARATION: In a non-stick pan or pot, bring 700ml of water and 2 tablespoons of extra virgin olive oil to a boil. Pour the contents of the bag, cover, and cook over medium-low heat for 16 minutes, stirring occasionally. Add more water if necessary. Remove the lid and continue cooking for 2 minutes or until the water is almost completely absorbed and the sauce is creamy. Add the saffron, adjust the salt, add extra virgin olive oil, and let it rest for 1 minute before serving.

TIPS: Add 1/4 cup of white wine to the cooking water. Cook it like a classic risotto by adding water gradually. Finish with butter and 3/4 teaspoon of unsweetened cocoa.

WINE PAIRING: Pinot or light white wine.
