Corsu Vecchiu is a traditional, semi-firm to firm ewe's milk cheese from Corsica, France.
Aged for 6 to 9 months, it features a natural rind and a rustic flavor profile with notes of hazelnut, caramel, and wild herbs, reflecting the island's terroir.
Corsu Vecchiu comes from the sublime Isle of Beauty which is characterized by its southern landscapes, its high reliefs and its breeding traditions proudly anchored in the local culture.
Corsu Vecchiu is made from the milk of Corsican sheep, which are excellent milk producers. These sheep symbolize the authenticity of the Corsican terroir which, combined with traditional know-how, provides superior quality to the production of Corsu Vecchiu.
