Serrano ham "24", is from pigs of Celtic origin, bred in Spain and selected for their size, age and proportion of fatty material.
Tasting note: Meat has hues ranging from pink to purplish red with a fine grain, and may occasionally show tyrosine crystals as a result of its lengthy curing process. Characteristic fragrance of delicately cured meat.

The reputation of Monte Nevado Serrano ham is a matter of experience: for many years we have mastered the art of aging it to perfection.
We select hams from heavy pigs, which allows us to extend the curing process for an average of 24 months.
When it's ready, Serrano 24 makes a grand entrance: it's at its absolute best.
Since 1898, we have known the best livestock farms and have accumulated the knowledge and experience to refine and select the exact curing time for each ham.
Our master ham makers inspect and classify the hams piece by piece, ensuring that each one has its proper maturation period. Our expert tasters determine when a ham is ready and deserves to bear the Monte Nevado label. Each ham is cured to perfection, no matter how long it takes.
Time, breeze, and no rush
Our slower, longer natural curing process allows us to obtain the full aroma and flavor of each ham: each one reaches its optimal point at a different time.
All of Monte Nevado's cellars and drying rooms are located in natural surroundings. Furthermore, their windows allow us to take advantage of the fresh air, just as our grandparents did. This results in a gentler and more natural drying process.
Since 1898 we have known the best livestock and the best pastures for the free-range mast-feeding of the montanera period, protected from the cold winds so that our pure Iberico pigs can happily roam, eat and rest peacefully, surrounded by holm oaks, gall oaks, oaks and cork oaks.
