Religieuse is a traditional French pastry: a Choux pastry filled with chocolate cream and topped with buttercream and chocolate glaze.
The Religieuse is said to represent a nun in a habit and was first created in 1540 by Catherine de Medici’s Florentine pastry chef Panterelli.
Religieuse is the French word for 'nun', who are affectionately honored in this dessert form via 2 chocolate topped choux pastry buns that are stacked on top of each other – the bottom bun larger and the top bun smaller, representing the body and the head. The buns are filled with pastry cream and topped with melted chocolate.
