Matured for 5 weeks, partly on rye straw Produced and matured in the commune of Saint-Nectaire (63) Milk harvested from AOP-certified farms.

A traditional craft that gives each wheel a unique personality, shaped by time and the care taken during its maturation.

Mading on straw is unparalleled in allowing the development of delicious and indulgent flavors, while also imparting a distinctive character and a melt-in-your-mouth texture. This particular technique, applied to our dairy Saint-Nectaire, gave birth to Paillon!

To perfect its character, our master cheesemakers keep it in their cellars for an even longer period: for 5 weeks, they patiently watch over it.
