It is the slow maturing process that allows the cream to develop all its aromas and sensory qualities.


It is left to rest for 16 to 18 hours, then churned respecting traditional methods to ensure the formation of beautiful non-uniform, and meltingly soft butter grains.

PDO Isigny Butter (Protected Denomination of Origin) is made in accordance with traditions, and exclusively from the milk of the Isigny terroir and Guerande salt crystals. As specified in the AOP technical manual, nothing is added or taken away the butter. Made with the best traditional creams of Isigny (matured 16 to 18 hours), it is famous for its golden buttercup color and its distinctive notes of milk.
