A delicious and traditional dish from Lyon. Made with pork shoulder, pepper, salt, nutmeg, sugar, 4 spices, garlic, horn of plenty, pistachios, and a splash of cognac.


Cooking instructions:


Cooking in water: Put the sausage in a large pan and cover it with cold water, don't prick it because water would get inside and spoil the flavor. Let it simmer on medium heat (do not boil or the skin will crack), covered with a lid, for 40 minutes.
