Description
Made by Jean Perrin in the Savoie region of the French Alps, this artisan cheese is made from mountain cow`s milk and is a smooth and very creamy cheese with a fresh white truffle taste. Always packed in a wooden box, this washed-rind cheese is brilliant to eat by itself, but truly comes alive when baked.
Made near the village of Clarines, situated high in the mountains of the Haute- Savoie, Fromager des Clarines is a pasteurized version of the French AOC (Appellation d’Origine Côntrolée) classic or the Swiss cheese known as Vacherin Mont d’Or. The French Mont d’Or is made in the Jura region of the Franche-Comté. Clarines are made on the other side of the
Jura in the Haute-Savoie.
Tasting Notes: If eaten when ripe the flavors are rich and earthy and can be quite pungent due to it’s washed rind characteristics. When baked with garlic, thyme, and brandy the oozey centre takes on subtle flavors but the
pungent cheese flavor is still the star.
